·        75g grated onion

·        30g breadcrumbs

·        Salt and pepper to taste

·        Olive oil for frying

Instructions:

1.     In a large bowl, mix together the ground beef, grated vegetables, egg, breadcrumbs, Parmesan cheese, oregano, salt, and pepper.

2.     Shape the mixture into meatballs.

3.     Heat olive oil in a large pan over medium heat.

4.     Fry the meatballs until browned and cooked through.

5.     Serve with your favorite sauce and pasta or vegetables.

Cheesy Veggie Quesadillas

Ingredients:

·        4 large tortillas

·        100g shredded cheese

·        50g chopped mushrooms

·        50g chopped zucchini

·        50g chopped bell pepper

·        25g chopped onion

·        1 tablespoon olive oil

·        Salt and pepper to taste

Instructions:

1.     Heat olive oil in a large pan over medium heat.

2.     Add the chopped vegetables and cook until softened.

3.     Season with salt and pepper.

4.     Remove the vegetables from the pan and set aside.

5.     Place a tortilla in the pan.

6.     Sprinkle a layer of shredded cheese on top of the tortilla.

7.     Add a layer of cooked vegetables on top of the cheese.

8.     Sprinkle another layer of shredded cheese on top of the vegetables.

9.     Place another tortilla on top of the cheese.

10.  Cook until the cheese is melted and the tortilla is crispy.

11.  Flip the quesadilla and cook until the other side is crispy.

12.  Repeat with the remaining tortillas and filling.

13.  Slice the quesadillas into wedges and serve.

Hidden Veggie Spaghetti Bolognese

Ingredients:

·        1 onion, chopped

·        2 garlic cloves, minced

·        1 carrot, peeled and grated

·        1 zucchini, grated

·        1 can of diced tomatoes

·        1 tablespoon tomato paste

·        1 teaspoon dried oregano

·        Salt and pepper to taste

·        500g spaghetti

Instructions:

1.     Heat olive oil in a large pan over medium heat.

2.     Add the onion and garlic and cook until softened.

3.     Add the ground beef and cook until browned.

4.     Add the grated carrot and zucchini and cook for 5 minutes.

5.     Add the diced tomatoes, tomato paste, oregano, salt, and pepper.

6.     Simmer the sauce for 15-20 minutes.

7.     Cook the spaghetti according to the package instructions.

8.     Serve the bolognese sauce over the cooked spaghetti.
